Ingredients

  • 1/2 pound smoked turkey, finely chopped
  • 1/3 cup chopped avocado (about 1/2 avocado)
  • 1/2 teaspoon lemon juice
  • 1/3 cup finely shredded carrot
  • 2 tablespoons creamy mustard blend (such as Dijonnaise)
  • 1/8 teaspoon pepper
  • 2 fresh poppy seed bagels, halved and toasted
  • 1/2 medium red onion, sliced and separated into rings
  • 1/4 cup alfalfa sprouts (about 1/2 pint)

Directions

  1. Combine first 6 ingredients in a large bowl.
  2. Spread 1/2 cup turkey mixture on top of each bagel half.
  3. Top bagels evenly with onion rings and alfalfa sprouts.
